  1. Prepare 1 cup of rice.

  2. It’s 1/2 of chana dal.

  3. It’s 1/4 cup of toor dal.

  4. You need 1/4 cup of urad daal.

  5. Prepare 1 tsp of salt.

  6. You need 1 tsp of sugar.

  7. It’s 1 tsp of fruit salt.

  8. Prepare 1 cup of curd.

  9. You need 10-15 of curry leaves.

  10. It’s 1 tsp of Mustard seeds.

  11. Prepare 1/4 tsp of hing.

  12. It’s 1/2 tsp of turmeric.

  13. It’s 2 inches of ginger.

  14. You need 6 of green chillies.

  15. Prepare 1 cup of lauki grated.

  16. Prepare 1 cup of carrot ,grated.

  17. Prepare 1/2 tsp of sesame seeds.

  18. It’s 4 tbsp of oil.

  19. It’s 1/4 tsp of sauf/ fennel seeds.

  20. You need 1/2 tsp of jeera /cumin seeds.

  21. You need 2 tbsp of lemon juice.

  22. It’s 2-3 bunches of Coriander leaves.

This is a baked, spicy lentil cake made Add ENO to the mixture and mix, this will make the handvo mix light and fluffy.

Handvo instructions

  3. Now, add, curd, mix and then add,salt, sugar and turmeric.Now, cover and keep for additional 2 hrs..

  4. Now add 2tbsp lemon juice and the grated bottle gourd and carrot..

  5. Also, add in the coriander leaves and mix. Batter should not be runny..

  6. Meanwhile, prepare a tempering, in oil add in mustard, zeera, saunf, hing and sesame seeds..

  7. Now, add in the curry leaves. Let splutter but be careful.. dont brn it transfer this tempering immediately in another utensil to stop it from burning..

  8. Now, add fruit salt to your batter. Mix gently..

  9. Now, in a non-stick add, 2 tbsp of the oil tempering, to this add the batter, around 3-4 cup in one go cover and let it cook for 7-8 mins. At low flame. Edges will turn brown..

  10. Now, take this out in a plate and add in 1 tbsp more of the tempering, flip the handvo this time and let it cook for 10 min at low flame, covered. Check with knife it will come out clean, if done..

  11. Serve with hari chutney, I served it with my burnt capsicum chutney. Enjoy!.
