Mutton Kuzhambu Mutton Curry. Mutton kuzhambu recipe a south indian gravy best suited for idli,dosa,rice,chapathi etc. For more detailed description with step by step pictures check here. Mutton Kuzhambu - Kuzhambu is a curry and pronounced as (koo-lum-boo) in Tamil.
The mutton pieces is cooked with freshly ground chettinad masala which gives extra flavor.
Chettinad mutton kuzhambu or chettinad mutton curry is a spicy, hot and aromatic dish which is flavoured with aromatic and distinctive spices like dagad phool (kal pasi or black stone flower), nutmeg and mace (jaiphal and javitri), staranise in addition to shallots (sambar onions).
Mutton Kuzhambu is a gravy/curry prepared using mutton(goat meat) and homemade spice powder (we will see more about this below).

Prepare 1/2 inch of cinnamon stick.

Prepare 1/2 tsp of Fennel seeds.

You need 1/2 tsp of Cumin seeds.

You need 5 of Dry Red Chillies.

You need 1 tsp of Curry leaves.

Mutton Kuzhambu Mutton Curry instructions

Clean and wash the mutton pieces..

Place a pressure cooker in the stove. Switch on the flame. Add the mutton pieces, 1/2 tsp Turmeric powder, castor oil, ginger garlic paste and some water. Mix well. Leave for 1 whistle in high flame and keep in medium low flame. Let it cook for 20 minutes..

Once the pressure goes off, open the cooker lid..

Place a sautepan in the stove. Switch on the flame. Keep in medium flame..

Add 1 tsp Sesame Oil, coriander seeds, cloves, cinnamon, fennel seeds,curry leaves few, red chillies, cumin seeds and peppercorns. Roast till it turns light brown colour. Transfer to a bowl..

Then in the same pan, add another 2 tsp Sesame Oil and shallots. Keep in medium flame and saute till it becomes translucent. Add tomato and saute for 5 mins. Atlast add grated coconut and saute well for a minute. Transfer to a bowl..

Cool all the fried items completely. In a mixie, add the first items which we have roasted. Grind to a fine powder..

Along with that powder, add the onions and coconut in the mixie. And add 1/2 tsp turmeric powder and green chilli. Grind to smooth paste by adding water gradually..

In a currypan, add the masala paste, cooked mutton along with that water and salt. Again add required water for it to cook. Cover and cook for 15 to 20 mins..

In tadka pan add the ingredients given for tempering. Fry till shallots becomes translucent..

Then add it to the mutton curry. Mix well and transfer to a bowl. Garnish with coriander leaves..

Now its ready to serve with hot rice, idli and dosa..
