Next take a pan on gas put all dry ingredients in it and dry roast it for 5 min and continue to stir it and let it cool down. When all ingredients cools down put in mixture jar, grind it and add a little bit of water to make a fine paste..

Then take a mixture jar, add chopped onion and make a paste. In the same way you will make tge tomato puree also..

Next take a cooker on gas add oil let it heat well then add onion paste, ginger-garlic paste and mix it well. When the colour of onion paste will change a bit then add dry ingredients paste and mix it till oil will separate from it..

Then add tomato puree, salt as required, red chilli powder, turmeric powder, coriander powder, kasuri methi and mix it then put stuffed brinjal and low the flame and mix it. Then add water as needed and stir it well and high the put lid to the cooker and give 2 whistles to it..

After 2 whistles then turn off the flame and let it cool down and finally masala baigan is ready to serve, garnish it with coriander spring..
