My moms dressing. Mom would start the day before, baking crescent rolls and preparing the always creative Jell-o mold. Then came the candied yams, the potatoes and the endless stream of dishes brought by the family. My Mom's Sausage & Sage Dressing is the only one we have ever had on Thanksgiving.

My mom made a homemade salad dressing very similar to this every night as well —and ALWAYS directly on the salad.
She used finely minced fresh garlic in place of the garlic powder, and occasionally (if she was making a really big salad!) she shook it up in a small jar and then applied it.

Preheat oven 350° Fahrenheit.

Take the giblets from the turkey and neck put into 3 quarts water and bring to boil.

Chop the onions and celery boil 4 eggs let cool set aside.

Pick the meat off the neck of turkey put back into boiling stock of giblets.

Add onions and celery to giblet stock let cook about 30 minutes.

Mix the poultry seasonings, celery, onions, stock and broth with dressing along with the giblet stock along with eggs for binding , make sure the giblet stock is cooled down or you will have scrambled binders.

Mix all together really well add to an oven safe pan raise the temperature to 375°Fahrenheit bake as temperature rises for an hour bottom rack of oven.

Last 15 minutes of cooking put on top rack of oven.

Helpful hint my mom said save the chicken broth for last to cool down the giblet stock so binding eggs dont scramble.
