Preheat oven to 220C.

Peel and slice the sweet potatoes into chips and put in a large bowl.

Add the macadamia oil and corn flour in a bowl and mix well to coat the sweet potato, then spread out on a baking sheet and bake for about 25 minutes, turning after 15 minutes.

5 minutes before the sweet potatoes are done, sprinkle the sesame seeds on top.

Remove the stems from the kale and slice into 1cm strips.

Place the kale in a steamer, then put the ginger on top and steam for 5 minutes, then set aside.

Cook the noodles in boiling water, then drain, rinse under cold water and toss together with the sesame oil (to stop them sticking together).

Mix the miso and tamari together with the kale and ginger in the warm pan you just cooked the noodles in.

Mix in the noodles and chopped avocado.

Divide the noodles amongst 4 bowls and top with the sweet potatoes.
Serve the sweet potatoes in coconut broth over the noodles in the bowls, with the remaining noodles, lemon wedges and coriander in separate bowls for self serving.
