I LOVE to cook and create.
I tend to be heavy on spice and the savory dishes and I love making hot sauces and salsas and have started a small salsa and hot sauce biz named Boca de Fogo (Fire in the mouth).
Pretty much anything involving peppers I enjoy.
Marinading and smoking meats is one of my favorite hobbies as well.
Reaper Madness Hot Sauce by Boca de Fogo instructions
-
Roughly chop the peppers, onion, and garlic and place in processor or blender and blend until finely diced.
-
Add remaining ingredients and liquefy..
-
Place in sauce pan and bring to a light boil. Reduce to a low simmer for 20-25 mins covered.
-
Return to blender and liquify further until there are no chunks or seeds visible.
-
Pour through a fine strainer into a jar or measuring cup so just the liquid remains. (I would not use cheesecloth because you will get a very watery liquid instead of a sauce.).
-
Distribute into hot sauce bottles or mason jars as you prefer. For best results, let refrigerate for at least 2-3 days before use..
-
You can use the remaining pulp/paste as well in other dishes. For instance, I make my own dill pickles and I use some to make a spicier version..
