There is considerable flexibility in choosing the vegetables to be added.

It can include seasonal vegetables and common vegetables like capsicum, cabbage.

Chop the veggies in small to medium sized pieces so that they cook well.

Ingredients of Mixed vegetables curry

  1. You need 10 of Okra.

  2. Prepare 4 of Egg plant.

  3. It’s 4 of Potatoes.

  4. Prepare 1 of large Carrot.

  5. You need 1 tsp of carry powder.

  6. Prepare 1/2 tsp of black pepper.

  7. Prepare 1 tsp of salt.

  8. You need 1 tsp of ginger and garlic paste.

  9. It’s 1 of onion.

  10. It’s 2 tbsp of cooking oil.

  11. Prepare 1 of tomato.

  12. You need 1 of tbso tomato paste.

  13. It’s of 1/2 capsicum and 1/2 bunch of coriander leaves finely chopped.

Mixed vegetable curry is easy to make and tastes great with plain rice, hot chapatis or parathas.

This is best done by setting them out on a plate for some time.

Mixed Vegetable Curry Recipe - There are many different ways of making mix veg recipes.

Today I am sharing the gravy version that goes perfect with roti, paratha, chapati or even rice. - Mixed vegetable curry can be perfect choice to include all veggies in our regular diet.

Mixed vegetables curry instructions

  1. Cut your vegetables to cubes.

  2. In a sufuria on a low heat put your oil and cut your onion into slices add the garlic and ginger paste fry until golden brown.

  3. Add your tomato,tomato paste,spices and mix add little water.

  4. Let it cook for about 1min then add your potatoes and carrots add more water,cover it and let it cook untill the potatoes are half way done.

  5. Now add your okra and egg plant (I didn’t cut my egg plant earlier because I didn’t want them to turn brown I normally cut them and add them directly) add some water if needed cook on a low heat untill done.

  6. When ready add your coriander leaves and capsicum, turn off the heat mix and cover (I forgot to take pics here).

  7. Enjoy! I served mine with pita bread.

Here Veggies and green peas simmered in spiced onion tomato paste and this curry goes well with.

Then add boiled vegetables, sugar and mix with gravy gently.

Add some water if you need.
