The Green Goddess Dressing in this recipe is a bit thinner than most because I was using it with a delicate "Spring Mix" of lettuces.

If you want it a bit thicker, feel free to substitute sour cream for half of the buttermilk.

  2. First plate is flour, take each chicken breast and dredge both sides in flour..

  3. Second plate is beaten egg. Add rough chop cilantro to egg, coat each flour dredged breast in egg mixture on both sides..

  4. Third is crushed croutons, take each flour coated, egg dipped breast and coat both sides in crushed croutons..

  5. In preheated 375°F oven, on greased wire rack over baking tray, place your chicken..

  6. Cook for 35 -45 minutes. Chicken should be golden color and cooked to 180°F internally..

  7. Take a few spoonfuls of green goddess dressing over each breast..

  8. Serve with rice, mashed potatoes, or just a nice steamed vegetable..
