Ingredients of Masala nduma/ arrowroots

  1. You need 4 of medium sized arrowroots.

  2. It’s 1 of large onion.

  3. You need 2 of large tomatoes.

  4. You need 2 bunches of dhania.

  5. Prepare 3 tablespoons of water.

  6. Prepare of Cooking oil.

  7. Prepare to taste of Salt.

  8. It’s 1 tablespoon of soy sauce.

  9. You need 1 tablespoon of tomato paste.

  10. You need 1 of teaapoon red chilli (optional).

  11. Prepare 1 tablespoon of tumeric.

  12. You need 2 of teaapoons mixed spices.

Arrow roots a.k.a Nduma as Kenyans like to call them are tubers which were indigenously grown.

They were highly regarded in ancient times. arrow root farming was previously regarded as a hard crop to grow since it required you to be near a river or a swamp.

Masala nduma/ arrowroots instructions

  1. Peel the arrowroots, wash, cut into desired pieces and boil to softed..

  2. After boiling, drain all the watet and set it aside. Meanwhile heat up cooking for deep frying the ndumas.

  3. Deep fry the ndumas till they become crispy. Drain the oil and set aside.

  4. In a saucepan, fry the onions and tomatoes. Add in the tomato paste and all the spices and soysauce and stir to mix well.

  5. Add in the 3 tablespoons of water to form a paste.

  6. Add in the dhania, stir well. Let it cook for 1 min. Serve and enjoy.

  7. Add in the deep fried ndumas slowly as you make sure they are coated in the paste.
