  1. You need of Ragda.

  2. You need 250 grams of White Peas/Safed Vatana.

  3. It’s 1/2 liter of Water to Soak.

  4. It’s 1 pinch of salt.

  5. It’s 2 tsp of Turmeric Powder.

  6. Prepare 1/2 of Water to boil the peas.

  7. It’s of Pattice.

  8. You need 500 grams of Boiled Potatoes.

  9. You need 2 of Green Chillies.

  10. You need 1 inch of Ginger.

  11. It’s 1 pinch of Salt.

  12. You need 6 tbsp of Arrowroot/ Corn Flour/ Bread Crumbs.

  13. Prepare 2 tsp of Dry Mango Powder.

  14. You need 4 tbsp of Oil (to shallow fry).

  15. It’s As needed of Garlic Chutney.

  16. You need As required of Mint Chutney.

  17. It’s as required of Tamrind Chutney.

  18. You need of For garnishing.

  19. Prepare 2 of large Onions, finely chopped.

  20. Prepare 2 of large Tomatoes, finely chopped.

  21. It’s 1 cup of Nylon Sev.

  22. Prepare as per taste of Salt & Pepper.

Mumbai Street Style Ragda Pattice instructions

  1. Soak white peas in hot water for 8-10 hours..

  2. Strain the water and add peas to a pressure cooker, add 1/2 liter water, salt (as per taste), turmeric powder and keep it to boil..

  3. Boil it on medium-low flame, around 4-5 whistles. Your Ragda is ready..

  4. In a bowl add boiled potatoes and smash them..

  5. Add Ginger Chilli paste..

  6. Add salt as per taste, dry mango powder..

  7. Add arrowroot/ corn flour/ bread crumbs and mix well..

  8. Make pattice of equal size, around 2" diameter..

  9. Heat the pan on medium-low flame and add oil..

  10. Add pattice and shallow fry on both the sides..

  11. Shallow fry until golden brown..

  12. Before assembling keep your chutneys, chopped onions & tomatoes, coriander ready..

  13. To assemble, take a bowl or a plate which is not too deep. Add 1/4 cup of ragda and place your pattice (3-4 nos.).

  14. Cover your pattice with more ragda(1/4 cup).

  15. Sprinkle chopped onions & tomatoes evenly..

  16. Add mint, garlic & tamrind chutney according to your taste..

  17. Sprinkle some dry mango powder, salt & pepper..

  18. Garnish with some chopped coriander and nylon sev..
