Pilau is commonly known as a Kenyan delicacy but this rice dish is commonly eaten all around East Just as Jollof rice is the most famous and most common dish of West Africa, so is pilau for the East.

Pilau dish step by step

  1. Cut your onions, tomatoes, eggplant, garlic into small pieces,.

  2. Smash your garlic and ginger until soft, heat your cumin seeds for two minutes then remove and smash till forms a powder.

  3. Cut your lemon into half and cut your cucumbers into small pieces.

  4. Take a sufuria and start frying your onions, eggplant,garlic and ginger.

  5. Add your tomatoes and cucumbers then simmer then add a spoon of tomato paste and cumin powder.

  6. Add your rice to the mixture and continue to simmer to avoid sticking then add water and even after adding water continue simmering then you cook at a low heat for about 20 minutes.
