Pilau instructions

  1. Put oil and onions in a sufuria then let them cook until onions are golden brown.

  3. Add the tomatoes, tomato paste and salt together with pilau masala then close and leave them to cook.

  4. Add enough water to cook the rice then allow it to boil before adding the rice.

  5. Using a cooking stick stir the rice so it doesnt stick on the surface..

  6. Reduce the heat and close to allow it cook moderately.

  7. Use a foil to wrap on the sufuria or if its a jiko use a lid to cover and put charcoal on top to cook moderately.

  8. When ready allow it to cool before serving.

Freshly ground spices add so much flavour, so get out the pestle and mortar!
