  1. Prepare 1 litre of full fat milk.

  2. It’s 2 tbsp of Vinegar or juice of 1 lemon.

  3. It’s 6-7 tbsp of liquid Nolen Gur or 1/2 cup chopped Nolen Gur- adjust.

  1. Boil milk by stirring constantly. Add vinegar or lemon juice. Stir constantly, the milk will curdle.

  2. Drain the curdled milk in muslin cloth over colander..

  3. Pass cold water over Chenna to remove the smell of vinegar. Keep Chenna hanging for 45 minutes to drain excess fluid..

  4. Either knead Chenna for 10 minutes or blend Chenna for easier way.

  5. Add Chenna and Nolen Gur to pan. Cook over low heat. Mix well.

  6. Its essential to cook over low heat to prevent Chenna from burning. Keep stirring constantly for 4-5 minutes.

  7. Cook until mixture leaves sides of the pan.

  8. Transfer mixture to cooled plate, it will be grainy in texture. Allow to cool slightly.

  9. While its still warm, knead mixture until texture turns smooth.

  10. If you have Sandesh moulds, then grease it,add mixture and shape it OR just shape like pedas. Press little Pistachio or raisins at centre, this is optional.

  11. Serve immediately or Refrigerate and serve cold.
