Easiest Way to Cook Perfect Dorayaki (Sweet Bean Pancakes) Delicious, fresh and tasty.

Dorayaki (Sweet Bean Pancakes). Dorayaki (どら焼き) is best described as a dessert with red bean filling between two slices of sweet fluffy pancakes. Traditional Japanese confection dorayaki is made of two hand-sized American-style pancakes sandwiched together with a sweet filling, the most popular of which is azuki red beans (anko). Legend has it that the first Dorayaki were made when a samurai named Benkei forgot his gong ('dora' in Japanese) upon leaving a farmer's home where he was hiding and the farmer used the gong to fry the pancakes, thus the name Dorayaki.

Usually it is made with eggs and milk, but I found the Japanese cooks have been using red bean paste as a sweetener in desserts for ages in everything from Dorayaki to mochi/daifuku to anmitsu.

Dorayaki is a delicious sandwich-like treat made with two pancakes and filled with red bean paste.

It's loved by kids and adults all across Japan. "You grab a pancake, spread some red bean paste on and top it with another pancake", said my aunt when I asked what dorayaki was.

  1. Prepare 30 g of sugar.

  2. You need 1 of egg.

  3. Prepare 80 to 100 ml of milk.

  4. It’s 120 g of flour.

  5. Prepare 1 tsp of baking soda.

  6. You need 1 pinch of salt.

  7. It’s 1 Tbsp of mirin (sweet sake).

  8. It’s 1 can of Azuki / red bean paste.

Although each dorayaki is essentially a type of pancake, it is little more than a breakfast companion for maple syrup or for cuts of fresh fruits.

The classic dorayaki is made up of two pancakes sandwiched with sweet red bean paste (aka azuki or anko sweet beans paste).

  1. Prepare a bowl and add in the egg and sugar. Mix them well then slowly add milk..

  2. Add flour, a pinch of salt, mirin and baking soda and mix them well. (note: dissolve the baking soda in one tsp of hot water before putting it into a bowl).

  3. Heat a pan with one teaspoon of oil. Wipe off excess oil with a paper towel. Then pour in 2 Tbsp of the batter until it is about 8 cm in diameter. When you see many bubbly spots on the surface of the pancake, it is time to flip it around. Cook the other side for a few minutes on low heat. The mixture should make about 12 pancakes..

  4. Put one Tbsp of bean paste on one pancake and cover it with another pancake. Do the same for the rest of the pancakes and youre done! Enjoy Dorayaki with hot green tea :).
