You can make this Spanish chicken stew as mild or spicy as you like….so play around with the flavour….add a small amount of spice, taste and add more if desired.

Heat the oil in a large saucepan or flameproof casserole dish on a medium heat, add the onion and cook for a few mins.

Pat the chicken thighs dry and lightly season with salt and pepper.

  1. Season chicken pieces with the salt and pepper and then dust on both sides with the flour..

  2. Preheat pot to medium high, add oil, then brown chicken, 4 to 5 minutes a side, or until each side is golden brown.

Remove chicken from pot and set aside..

Then add tomatoes, bay, oregano, and lemon zest, give it a stir, and let the herbs bloom for a minute or so..

Simmer, with lid askew for another 20 minutes or so, stirring occasionally..
