Ingredients of Beef and Courgette Burgers

  1. Prepare 1 of courgette.

  2. You need 1 of onion.

  3. It’s 400 g of extra lean beef mince.

  4. Prepare 2 cloves of garlic.

  5. It’s 1 tablespoon of tomato purée.

  6. Prepare 1 teaspoon of oregano (fresh is best).

  7. You need 1 teaspoon of basil (fresh is best).

  8. Prepare 1 teaspoon of olive oil.

  9. Prepare 4 of floury baps.

  10. You need 2 of fresh tomatoes.

  11. You need handful of mixed salad leaves.

One way I love to do this is with pasta sauce like this Cauliflower Alfredo or Carrot Mac and Cheese and burgers can be a surprisingly easy place to hide.

Serve the burger on the brioche bun with a bed of heart of romaine lettuce and sliced English beef tomato.

Top with crispy bacon, sliced gherkin and a dollop of mayonnaise, mixed with English mustard.

Trim the ends of the courgette, slice in half lengthways and then in half across.

  1. Grate the courgette and onion, and place in a large mixing bowl..

  2. Chop the garlic into small pieces and add to the mix..

  3. Add the herbs, tomato purée and mince, and season with salt and pepper..

  4. Mix with your hands until thorougly combined..

  5. Shape the mix into four balls of equal size, and press flat into a burger shape, approximately 2cm in height..

  6. Heat the oil on a medium heat in a frying pan..

  7. Fry the burgers for approximately 5 minutes on each side, until they are nicely browned..

  8. Layer the burgers in the baps with mixed leaves and tomato slices..

Trim the courgette and grate it coarsely on to a board, then tip it into a large mixing bowl.

Peel the onion and grate it coarsely, then add this to the bowl with the courgette.

Put the minced beef, garlic, oregano, basil and tomato paste or purée into the same bowl and season well with salt and pepper.

If you don't eat beef, then you could hide the vegetables in chicken burgers, lamb burgers or even bean burgers.

Tip - this recipe uses just half a courgette.
