I used left over sheep head fish.
I am from New Orleans and we have a camp in the bayou to catch fresh fish and sheep head is a meaty white fish.
I grilled and seasoned it the night before.

I attempted to make these fish cakes tonight and followed the instructions to the letter.
The result was a wet, sloppy mess.
I had to add four additional tablespoons of bread crumbs to get a fish cakes that I could press onto parchment paper and freeze, but the fish cake was still a wet in cohesive lump that did not cook well and fell apart.
Once cooked, remove the fish from the colander to a plate, and discard the skin.
Mash the potatoes, spreading the mash round the sides of the pan to help it cool down quickly.
