Cod Fish. Spanish Style. This recipe is a classic in Mexico and Spain. It has a unique flavor and I could recreate it using cabbage instead of fish. It is a true vegan delicacy!

  1. It’s 15 oz of cod fish.

  2. Prepare 8-9 oz of diced tomatoes (½ can).

  3. Prepare 1/2 of red onion.

  4. It’s 1/2 of carrot.

  5. It’s 1/2 of bell pepper.

  6. It’s 1 of garlic clove.

  7. You need to taste of Parsley.

  8. Prepare to taste of Salt.

  9. Prepare 1 tablespoon of olive oil.

  4. Peel and shred carrot, clean and slice bell pepper into thin strips.

  5. Add carrot and pepper in the pan and fry for 3-4 minutes (constantly stir the veggies).

  6. Add tomatoes, salt, pepper, basil and cook for 5 more minutes.

  7. Move veggies to the sides of the pan and place fish in the middle. Put a lid on and cook on low heat for 8-10 minutes. During this time pour veggies juice/sauce on top of the fish two times.

  8. Mince parsley and season the dish.
