Unfold pastry sheet onto lightly floured surface (That is important and it will stick, if its not lightly floured!). I use a sheet of wax paper on the counter for easy clean up and to roll up it up (you will see what I mean further down in the directions)..

Sprinkle spinach on top of bacon. (I tear up tiny pieces with my fingers).

Roll up pastry, jelly roll style. I use the wax paper to roll it up, and twist up the ends so it looks like a package..

Put pastry roll in freezer for at least 15 minutes to firm up just a bit..

Remove from freezer and slice. I like mine thinner so I go just under 1/2 inch. If anything falls out of the slice, when you place it on your baking sheet just stuff it back in the swirl..

Place swirls on a baking sheet lined with parchment paper. (This helps with clean up, and makes the bottoms crisp up nicely)..

Brush top of swirls with egg mixture..

Bake for 14-16 minutes or until golden brown..
