  1. In a pan, heat oil and mustard seeds, when they start spluttering add the cumin seeds and all the tempering ingridients. Saute for 2 minutes..

  3. Add ginger paste and garlic paste. Saute until onions start to brown slightly..

  4. Add tomatoes and green chillies. Saute for 2 minutes and add red chilli powder,turmeric power,cumin powder and coriander powder along with 1/4 cup water..

  5. Add the pumpkin cubes and salt.Stir and cover.Cook on simmer until pumpkin is half cooked..

  6. Add the tamarind- jaggery water,crushed deep- fried onions and mix well..

  7. Cover and cook until the pumpkin is soft and cooked through. Check seasoning..

  8. Garnish with chopped coriander leaves..

  9. Serve hot along with Indian flatbread(rotis)..
