Ingredients of Puliyogare Puliyodharai Tamarind Rice

  1. You need of For Tamarind Masala Powder.

  2. Prepare 1 tsp of chana dal.

  3. It’s 1 tsp of Urad Dal.

  4. You need 1/4 tsp of Hing/Asafoetida Powder.

  5. Prepare 1/4 tsp of Black Peppercorns.

  6. You need 1/4 tsp of Fenugreek (Methi) Seeds.

  7. You need 2 tsp of Coriander Seeds.

  8. Prepare 1 tsp of Sesame Seeds.

  9. It’s 5-6 of Dry Red Chillies.

  10. You need of For Tamarind Mix.

  11. You need 100 gm of Tamarind balls.

  12. It’s 1 1/2 cups of Warm Water.

  13. Prepare 3-4 tbsp of Sesame Oil.

  14. Prepare 1 tsp of Mustard Seeds.

  15. It’s 1 tsp of Chana Dal.

  16. It’s 1 tsp of Urad Dal.

  17. It’s 1/2 tsp of Turmeric Powder.

  18. It’s 1/4 tsp of Hing/Asafoetida Powder.

  19. It’s 1/4 Cup of Peanuts.

  20. You need 3-4 of Dry Red Chillies.

  21. It’s 12-15 of Curry Leaves.

  22. Prepare To Taste of Salt.

  23. Prepare To Taste of Jaggery (To Balance the Sourness).

  24. Prepare 4 Cups of Cooked Rice.

Puliyogare Puliyodharai Tamarind Rice instructions

  1. For Tamarind Masala Powder: In a Frying Pan : Take 1 tbsp of Sesame Oil & Dry Roast: All the aforementioned ingredients for the same & let it cool down before grinding it to a smooth paste, in a blender jar & set aside.

  2. Take a Frying Pan : Add 3 tbsps of Sesame Oil & add into it- One by One Mustard Seeds, Urad & Chana Dal, Black Peppercorns, Curry Patta, Fenugreek and Sesame Seeds, Hing & Dry Whole Red Chillies Coriander Seeds, Peanuts, Turmeric Powder to sauté well until nicely blended & combined.

  3. When it releases nice aroma then, add in the Tamarind Purée & mix well, also add in the salt & jaggery (to balance the sourness), sauté & bring to a boil- once starts boiling, reduce the flame to medium-low & cook for about 10 mins time until the raw smell of the Tamarind goes off.

  4. Now, it becomes quite richer & thicker in its consistency and that’s how it should be…Take a large serving plate/bowl- Add in it the Cooked Rice & then, pour in it- a few servings of this freshly made Tamarind Gravy….

  5. Give it a nice mix & allow it to sit for about half an hour’s time to the aroma of the Tamarind Masala Gravy well incorporated into it… Our Tamarind/Puliyogare/Puliyodharai Rice is ready to be served hot and deliciously decadent & aromatic.

Puliyodharai or Tamarind rice is a rice dish popular in South India.
