I make this sabji often for weekend breakfast/brunch and that tastes best with whole wheat paratha and a bowl of fresh Dahi.

Sookhe aloo sabji is one of absolute childhood favourite because I simply adore potatoes in all forms.

Ingredients of Vrat wala aloo paratha

  1. You need of For stuffing.

  2. Prepare 4 of large sized potatoes (boiled).

  3. Prepare 1 tsp of grated ginger.

  4. Prepare 2 of finely chopped green chilies (optional).

  5. Prepare 2 tsp of Amchur(dry mango) powder.

  6. You need to taste of Sendha namak (salt).

  7. You need 1 tsp of roasted cumin powder.

  8. You need 1 tsp of red chilli powder (optional).

  9. You need 1/2 tsp of black pepper powder.

  10. Prepare of For dough.

  11. You need 1 1/2 cup of rajgir aata(flour).

  12. Prepare 1/2 cup of kuttu aata(buck wheat flour).

  13. It’s 2 tbsp of sago aata(flour).

  14. Prepare 1 tsp of Sendha namak(salt).

  15. You need 1 tsp of black pepper powder.

  16. It’s as needed of Water.

  17. You need of Ghee for frying.

  18. Prepare 1 cup of kutu aata(buck wheat flour) for dusting.

These vrat wale aloo goes well with Kuttu ki poori or Kuttu roti or Rajgire ki poori or Rajgira paratha.

I served them with Singhare ke atta ki poori (pooris made from water chestnut flour) and Kala chana sundal (black chickpea sundal).

Vrat wala aloo paratha instructions

  1. In a large mixing bowl take all aata and mix well. Add salt and pepper in it and mix well. Gradually add water and knead a dough. It should be like roti dough. Take 2 tsp ghee in your hands and knead dough again. Keep aside..

  2. In a mixing bowl take boiled and peeled potatoes. Mash them completely. Add aĺl stuffing masala in it and mix well..

  3. Now take a medium sized balls of dough and flatten it by fingers. Place some stuffing in center and gently make a ball..

  4. Press it with palms and flatten a little by using fingers and palms. Dust it with flour and place it on rolling board. Flatten a little and place it on heated tawa..

  5. Fry until golden spots appears on both sides. Serve hot with green chutney and cucumber raita..

Then flip the paratha and add oil on top side and cook for another minute.

Again flip the paratha and press the paratha with the help of spatula so that you get nice golden brown color on both side.

This way cook all the parathas.

Rajgira paratha are ready to serve.
