Turiya Patra Sabji. Turiya patra shaak features an unusual combination of ridge gourd and paatra. In Gujarati tradition, turiya patra nu shaak is a must-serve item for weddings held in Gujarat. In the customary way, people add the paatras directly without steaming, but that takes much longer to cook.

Turiya Patra nu Shak is one of my favorite shak or sabji.

It is traditional Gujarati shak or sabji.

Gujarati wedding is incomplete without this Shak.

You can have Turiya Patra Sabji using 20 ingredients and 6 steps. Here is how you cook it.

Ingredients of Turiya Patra Sabji

  1. You need 100 grams of Colocasia leaves.

  2. You need 300 gms of Turai (ridged gourd).

  3. It’s 6-7 tbsp. of Oil.

  4. Prepare 2 tsp of turmeric powder.

  5. You need 1 tsp. of Red chilli powder.

  6. You need to taste of Salt.

  7. It’s 1/4 tsp of soda.

  8. It’s 1 tsp of sugar.

  9. It’s 1 cup of besan.

  10. Prepare 1 tbsp. of Jowar flour.

  11. It’s 1 tbsp. of Rice flour.

  12. It’s 4 tbsp. of Ginger chilli crushed.

  13. You need 2 tbsp. of Fresh Coconut.

  14. You need 2 tsp. of Garam masala.

  15. You need 1 tsp. of Asofoetida.

  16. You need 1 tsp. of Mustard seeds.

  17. You need 1 tsp. of Garlic paste.

  18. It’s 1 tbsp of Coriander cumin powder.

  19. You need 1 tbsp of lemon juice.

  20. It’s 2 tbsp. of Jaggery.

The main ingredient of this dish is ridge gourd (Turiya) & Steam Patra.

It is simple to make and very delicious.

It is served with poori, fulka rotli or bajra na rotla.

Turia Muthia nu Shaak is an authentic Gujarati recipe that is made from ridge gourd also known as turia or turai and cooked in fenugreek leaf dumplings called muthia.

  1. First cut stems from colocesia leaves.wash and rinse. Now remove skin of turai and cut into long pcs. And wash..

  2. Now heat oil in abig vessel. Add mustard seeds asofoetida and ginger chilli garlic crushed saute for a min and add turai pcs.salt. saute.and add water 1/2glass and cook on a mid. flame..

  3. Now for batter:-Take a besan rice flour jowar flour in a parat add 1tbsp oil. Salt turmeric powder red chilli powder garam masala asofoetida ginger chilli paste jeggary lemon juice coconut paste and soda mix well and make a semisolid batter..

  4. Take aleaves spread batter put small leaves on a same leaves and spread batter. Fold both side spread batter and roll from down side. Like this way make all patra..

  5. Now add 2glass water in turai mixture boil and set all patra in a mix turai subji. Stir well. Cover lid and cook on a mid. Flame 7-10mins. Open and stir add turmeric powder corriender cumin powder garam masala sugar Mix well and cook 5min. On slow flame.Turai patra is ready..

These muthias or the gram dumplings also help the gravy to thicken while the ridge gourd adds nutritional value and fiber to this dish.
