Briefly heat the milk in the microwave until its just about to come to a boil. Cool it down to about 60°C/140°F. (You don't have to use a thermometer - just make sure it's cool enough so that it won't cook the egg.).

If a film forms on the surface of the milk, skim it off. Gradually add the milk to the bowl while mixing continuously..
