Ingredients of Idli Milagai Podi/South Indian Gun powder

  1. Prepare of urad dhal.

  2. You need of chana dal.

  3. Prepare of sesame seeds (black/white).

  4. It’s of garlic.

  5. You need of gingely oil.

  6. You need of dry red chilli.

  7. You need of Asofetida/Hing.

  8. It’s of Salt.

Idli podi is a flavorful south Indian condiment made of lentils & spices.

It is also known as milagai podi, gun powder or chutney pudi.

If you try to blend all the roasted ingredients together, it may yield a very coarse powder unless you have a powerful blender.

Serve idli podi with idli & ghee.

Idli Milagai Podi/South Indian Gun powder instructions

  1. Crush garlic and sun dry for 2 days..

  2. Dry roast urad dhal and after it turns golden brown add the garlic and saute. Remove and set aside in a plate..

  3. Add chanadhal in the same pan and dry roast till golden brown. Transfer to the plate. Similarly roast sesame seeds also till starts to cracks..

  4. Add oil to the pan and fry the red chillies till they puff. Transfer to the plate and allow all ingredients to cool..

  5. Take all ingredients in a blender, add asofetida and salt. Grind to fine or little coarse powder depending on your preference..

  6. Store in an airtight container. Serve with idli or dosai..

Milagai Podi or Gun Powder is an easy South Indian spiced powder, which when served by mixing it with gingely oil or ghee, gives a tongue-tickling spicy taste to the awesome Idly or Dosa…!

It makes a quick side dish when there is little time to make breakfast.
