This lauki sabzi is very easy, simple and made with minimal ingredients and it goes well with roti, paratha or with dal-rice, rasam-rice etc.

Lauki Kofta Curry - A Wonderful Bottle Gourd Recipe.

Lauki Kofta Curry is a hugely popular North Indian dish where kofta balls are made from its chief ingredient, Lauki (Bottle Gourd), spiced with masalas, and incorporated into a wonderful curry.

Lauki Musallam is a stuffed curry which is a healthy to have on any special occasion to have a royal and an authentic touch.

Take a fork and punch on the peeled lauki ( bottle gourd) put salt on it and rub it, remove the centre part of the lauki.

  1. To boil the chicken,combine in a pan chicken, whole spices, salt, ginger garlic paste, water and boil the chicken till tender..

  2. While the chicken is boiling, blanch the Bottle gourd/Lauki. Once blanched remove from water and dry on a tissue paper to remove excess water. Once the Lauki are cooled scoop the inner pulp of lauki to form a ring..

  3. To mince the chicken, shredded the boil chicken and add it in a mixer grinder along with green chilli and coriander leaves. (Please do not over grind the chicken).

  4. To make the filling, heat oil in a pan, add sliced onion and saute till transparent. Add ginger garlic paste and saute..

  5. Now add the minced chicken, all the powdered spices and mix the filling well. Check the salt and spiceness at this level..

  6. Once the filling is combined set aside to cool..

  7. After the chicken is cooled, add the boiled and smashed potato and mix well..

  8. Once the filling is ready, stuff the lauki rings with the chicken filling..

  9. After stuffing the lauki rings, crumb the rings with breadcrumbs and cornflour slurry only on the sides where the filling is..

  10. In a fry pan, shallow fry the lauki rings till golden brown and crisp..

  11. Serve hot..

Take some water in a pan add salt, turmeric and lauki cook.

Bottle gourd has become one of my favorite veggies recently.

Though I had seen this veggie in the Indian stores before, I had no idea how to cook them.

Recently I had a lauki thoran which I really loved, that made me search for more dishes with this veggie.
