Recipe: Delicious Chicken Kebabs Delicious, fresh and tasty.

Chicken Kebabs. Place chicken and colorful veggies on skewers, grill, and enjoy! This is a quick way to enjoy a delicious barbequed meal. These spicy chicken kebabs can be marinated the day before for extra flavour.

Serve with chatnis (dips made from coconut, cilantro and mint, usually found in Indian grocery stores) or tomato sauce.

Chicken kebabs are so simple to make, they are basically marinaded chicken, threaded onto skewers and cooked through.

For this recipe we use a marinade of yoghurt with paprika , cumin , a little cinnamon , chilli flakes , garlic and lemon.

Ingredients of Chicken Kebabs

  1. It’s 1 cup of boiled and shredded chicken.

  2. Prepare 3 of potatoes, boiled and mashed.

  3. It’s 1 of carrot, grated.

  4. Prepare 1 of capsicum, finely chopped.

  5. You need 1 tsp of garam masala.

  6. You need 1 tsp of red chilli powder.

  7. You need 2 of green chillies, chopped.

  8. Prepare 1 cube of processed cheese.

  9. It’s 1 tbsp of mayonnaise.

  10. It’s to taste of Salt.

  11. Prepare 1 tbsp of coriander leaves.

  12. Prepare as required of Oil to fry.

The kabobs are great, but one of my favorite ways to use this is as a sandwich: leave the chicken breasts intact, or cut in half to fit a hamburger bun.

Otherwise, follow the recipe for marinating the chicken (I did put the garlic and onion in the marinade for flavor).

Preheat the grill to medium-high heat.

To grease the grill, lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over the grates several times until glossy and coated.

Chicken Kebabs instructions

  1. In a pan heat some oil and saute the carrots and capsicum. Set aside. In a bowl take the mashed potatoes, chicken, sauteed vegetables and salt, chilli powder, garam masala, green chillies, coriander leaves, mayo and grated processed cheese. Mix everything well. Shape into tikkis and shallow fry in a non-stick pan smeared with some oil. Enjoy.

I also added some mushrooms to the skewers which was a nice addition.
