First take the Maida/Flour..salt..in a bowl. Add water and knead a soft dough. Add oil and knead again. Keep aside covered until you make the filling. In another bowl add vinegar and green chillies and salt and keep aside..

Heat a pan with a tsp of oil and add the ginger garlic and green chillies. Switch off the flame and add half of turmeric… Kashmiri red chilli powder.. Garam masala.. Chaat masala.. Asafoetida.. Salt.. Mix nicely and then add the boiled and mashed potatoes. Mix well and keep aside. Now take a portion of the dough and roll into a circle like we do for chapathi. Heat wok and cook both sides well. Apply oil or butter. Like this make as much you need..

Now take a pan and dry roast the cumin.. peppercorn.. Coriander seeds… And all the remaining masala powders… Switch off… Cool and grind into a powder.. If you want you can replace the whole spices to powders and directly mix all the powders. But I suggest as it is.. Because it gives more flavour..

Now take one Flour Roti… Take the potato mix and roll it into cylindrical shape… Place it on the Roti… Sprinkle the vinegar chilli mix… Add chopped onions and chopped coriander…Cheese is optional….Sprinkle the Frankie masala and roll it. Wrap with a butter paper and serve😋👌.
