Dim Kosha or Hanser Dimer Kosha is one of the most satisfying Bengali style Duck Egg Curry.

This exotic curry is full of flavours and quite rich in taste.

You can cook Duck egg curry/Hanser Dimer Kosha using 19 ingredients and 13 steps. Here is how you achieve that.

Ingredients of Duck egg curry/Hanser Dimer Kosha

  1. It’s 6 of hanser dim/ duck eggs boiled and peeled (chicken eggs can also be used).

  2. You need 1 of large potato cut into 6 pieces.

  3. You need 1/2 of onion thinly sliced.

  4. It’s 1 1/2 of onion roughly chopped.

  5. It’s 1 of tomato chopped.

  6. Prepare 1 tablespoon of ginger paste.

  7. Prepare 1 1/2 tablespoon of garlic paste.

  8. It’s 3-4 of green chilies.

  9. You need to taste of Salt.

  10. It’s 1 teaspoon of sugar.

  11. It’s 1 teaspoon of turmeric powder.

  12. Prepare 1 1/2 teaspoon of cumin powder.

  13. It’s 1 1/2 teaspoon of coriander powder.

  14. It’s 1 teaspoon of red chilli powder.

  15. It’s 1 teaspoon of Bengali garam masala powder.

  16. You need 7 tablespoons of mustard oil.

  17. You need 2 of bay leaves.

  18. You need 1/4 teaspoon of cumin seeds.

  19. You need 1 tablespoon of chopped coriander leaves for garnishing.

It is slightly different from Dim er Dalna or Everyday Egg Curry.

Dim er Kosha is spicier, tastier and thicker than regular Dimer Jhol.

Dimer kosha is a popular Bengali style spicy oily Egg curry, very much different from the rgular Dimer Dalna.

Dimer Dalna or Dimer jhol is light runny curry with boiled egg while Kosha means bhuna or slowly cooked oil based spices which should be thicker than the normal curry.

Duck egg curry/Hanser Dimer Kosha instructions

  1. With a fork prick the eggs and keep aside. This helps the spices to reach the inside of the egg..

  2. Make a paste of roughly chopped onions, tomatoes, ginger and garlic..

  3. In a kadai, take oil and heat it. Once the oil is hot, gently drop the eggs in the kadai..

  4. Fry the eggs till the outer cover turns golden and slightly crispy. Keep them aside..

  5. Then, fry the potatoes till the edges are slightly golden brown in colour. Keep them aside..

  6. To the same oil, add bay leaves, cumin seeds and sugar. Let the sugar caramelize but be careful not to burn the sugar. This gives a wonderful colour to your gravy..

  7. Now, add the sliced onions to the kadai. Saute them till translucent..

  8. Add the onion and tomato paste to the kadai. Also, add turmeric powder, cumin powder, coriander powder, red chilli powder and salt and continue sautéing for 2 minutes on medium flame..

  9. Add the potatoes, and about ¼ cup of water and continue cooking..

  10. Cook till you see oil leaving the sides of the pan..

  11. Now, add the eggs, garam masala and fold them along with masala..

  12. Add about ¼ cup of water and let it simmer till you achieve the desired consistency of the dimer dalna. Turn off the flame..

  13. Garnish with coriander leaves and serve dimer dalna with basanti polao, Bengali fried rice or hot steamed rice..
