Dahi vada chat. Dahi Vada recipe is my fav…. Ever since I tasted the chat style dahi vada at Nilgiris I wanted to recreate it at home. I love anything curd based and when it comes to chaats, I cannot resist myself.

Dahi vada is also popularly known as Dahi bhalla in North India.

Towards the South, a variant of this is known as thayir vadai in Tamil, perugu vadalu in Telugu and mosaru vade in Kannada.

This favorite Dahi Vada or Dahi Bhalla recipe has the softest lentil fritters drenched in creamy yogurt and topped Dahi Vada is popular all over India, but especially in North India.

Ingredients of Dahi vada chat

  1. You need 1 cup of Soaked udad dal.

  2. Prepare as needed of oil for frying.

  3. It’s to taste of salt.

  7. Prepare 3 tsp of Powdered sugar.

  11. Prepare 1/8 tsp of fennel seeds.

  12. Prepare 1 tsp of Kashmiri Mirch powder.

  13. Prepare of For green chutney.

  14. Prepare 1/2 cup of Green Freshy Coriander leaves.

  15. You need 1 tsp of Roasted chana(chickpeas).

  16. Prepare 3-4 of Green chillies.

  17. Prepare to taste of salt.

  18. Prepare of for Garnishing.

  19. You need 1 tsp of chat Masala.

  20. It’s 2 tsp of cumin powder.

  21. It’s handful of Pomegranate seeds.

Dahi vada is a type of chaat (snack) originating from the Indian subcontinent and popular throughout South Asia.

It is prepared by soaking vadas (fried flour balls) in thick dahi (yogurt).

Dahi vada is also known as "dahi vade" (दही वडे) in Marathi, dahi vada (दही वड़ा) in Hindi, "dahi bhalla" in Punjabi.

Dahi vada chat instructions

  1. For vada.

  2. Once the udad dal is soaked for 6 to 7 hours strain the excess water and add dal in mixi jar and churn it to make thick paste (avoid adding water for making paste as much as possible).

  3. Once paste is ready add salt as per taste,now beat this paste with beater manual/ electronic till paste becomes fluffy (the test is to drop the paste ball into bowl of water if it floats the batter is ready and if sink the battter is not ready).

  4. Tip:making of paste fluffy is very important, if it’s not fluffy the vada will not be soft and melt in mouth but will be hard on cooking.

  5. Once the batter is ready heat oil in wok fry the vada at slow to medium flame and then add them in room temperature water (don’t use chit/ warm water) and don’t press the vada.

  6. Let the vada rest in water, the vada will sink in water after some time,which indicates it is ready to be taken out but never squeeze vada.

  7. Mithi chutney.

  8. In a pan take Amchur powder,add water in it and mix properly till lumps dissolved now add Kashmiri red chilli powder,fennel seed and jaggery and cook it on slow flame for around 7 mins or till jaggery dissolve,set it aside for cooling.

  9. Green chutney.

  10. In mixi jar take green coriander leaves,roasted chana,one spoon dahi,salt,green chilli and churn it to make green chutney.

  11. Preparing dahi.

  12. In one cup dahi add powdered sugar,rock salt and add little bit of water to make thick lassi consistency curd.

  13. Assembling.

  14. In bowl take vada pour dahi on it add mithi chutney green chutney sprinkle chat masala,roasted jeera powder,chilli powder and some pomegranate seeds.

Sprinkle chat masala and kashmiri mirch powder on Dahi Vada.

There is no need to add other masala or spices as.
