Curd Rice with samo. Smoked Salmon with Curd Rice recipe is an exotic fusion of salmon fish with curd rice. This easy-to-make fusion recipe will satiate your hunger and will surely give your mouth a tongue twist. It is made with grilled fish fillets tossed in curd and served with some chilly tomato sauce, making this a must try for all the spicy food lovers.

It is Diabetic Friendly too due to low in calories and high in fibre.

A bowl of Bhagar served with a side of curd keeps you full until lunch.

Samo (fasting recepie) samo (vari or fasting rice), potatoes, green chillies, tomato, jeera, Sendha namak (fasting salt), Curry patta, Oil Curd rice.

You can have Curd Rice with samo using 11 ingredients and 4 steps. Here is how you achieve it.

Ingredients of Curd Rice with samo

  1. Prepare 1/2 cup of samo rice (washed and soaked for 10..12 minutes & drained).

  2. Prepare 1 cup of Curd.

  3. Prepare 1/4 cup of Milk.

  4. It’s to taste of Salt.

  5. It’s 1 tsp of ghee.

  6. Prepare 1/2 tsp of Cumin seeds.

  7. Prepare 1 of Red chilli dry.

  8. You need 1/2 cup of Cashew/ peanuts.

  9. It’s 1/2 cup of chopped cucumber.

  10. You need as needed of Coriander leaves.

  11. You need as needed of Pomegranate kernels to garnish.

Curd rice is my absolute favorite one.

When i dont feel like eating anything heavy for lunch like rice, curries and kuzhambu, i make myself some curd rice and it is totally yummy.

I already have a fruity curd rice. in my blog, but this one is a simple method of making it.

Plain curd also goes well with it.

Curd Rice with samo step by step

  1. In a pan put 1 1/2 cup water..bring it to boil.. add rice and salt. Simmer and cook till tender.. when taking off the flame keep the consistency bit loose as these rice tends to get thick on room temperature..

  2. Mix curd and milk.. add to the cooled down rice.. mix chopped cucumber well and leave to chill in the refrigerator..

  3. For tempering… Heat a tsp of oil.. Add cashew/ peanuts.. roast for a minute.. add cumin seeds.. red chilli.. coriander leaves. Add the tempering to chilled curd rice..

  4. Garnish with pomegranate pearls and coriander leaves before serving.

Serve samvat rice khichdi topped with a bit of ghee and garnished with coriander leaves with vrat ki kadhi, peanut kadhi or any curry meant for fasting.
