Raj kachori. One of the most popular chaats that you will see in North India is Raj Kachori. A dish that has so many flavours that will burst in your mouth in just a bite. Kachori is supposed to have originated in Uttar pradesh & rajasthan, In these states it is usually a round flattened ball made of fine flour filled with a stuffing of baked mixture of yellow moong dal or Urad Dal (crushed and washed horse beans), besan (crushed and washed gram flour), black pepper, red chilli powder,salt and other spices.
In Hindi, raj indicates royal and kachori indicates a big puri filled with a variety of delicious flavorings.
All the flavorings can be chosen depending upon your taste palette.
Basically this is a variety of chat where a lot of things (I have used potato, kala chana, moong as main fillings) are filled in.

Raj kachori instructions

Firstly, in a large mixing bowl take 1½ cup maida, ½ cup rava, ¼ tsp baking soda and ½ tsp salt. mix well.pour 2 tbsp of hot oil over flour and crumble.

Add in water as required and knead 5 minutes.prepare smooth and stiff dough adding water as required.now pinch a ball sized dough, and flatten it.grease the ball with oil.

Roll slightly thick like poori.drop the rolled kachori into the hot oil.flip over and fry the kachori until golden brown all over.drain off the kachori.

Now take a poori and make a hole. poori turns crisp once cooled completely (after 2 hours).

Stuff with 1 tbsp boiled potato, 1 tbsp boiled chana and 2 tbsp boiled moong dal.now pour 2 tsp curd, a tsp of green chutney and tamarind chutney..

Also sprinkle chilli powder, cumin powder, chaat masala, aamchur and salt.garnish with 2 tbsp sev, 1 tbsp boondi, 1 tbsp pomegranate, 1 tsp coriander and 2 tsp onion.finally, enjoy raj kachori immediately as a chaat.
