Steamed Gujarati Farsan made out of split bengal gram and rice batter fermented over night and steamed with very basic spices.

Locho is steamed Gujarati Farsan (Snack /Side Dish) originated in Surat city.

It is made from split bengal gram and rice batter or some people use only.

Ingredients of Khastaa Sooji Puri with Surti Locho

  1. You need of For Sooji dough.

  2. Prepare 2 cup of wheat flour.

  3. Prepare 3/4 cup of refined flour.

  4. Prepare 1 cup of Sooji.

  5. Prepare 2 tbsp of curd.

  6. It’s to taste of salt and sugar.

  7. Prepare of For Dal Surti locho.

  8. It’s 1 cup of Chana Dal.

  9. Prepare 1 cup of Urad Dal.

  10. It’s 1 tsp of ginger green chilli paste.

  11. It’s 2 of black pepper.

  12. You need 2 of Dry red chillies.

  13. You need To taste of Salt.

  14. Prepare 1 tsp of jeera/ cumin seeds.

  15. It’s of For Suji Puri stuffing.

  16. You need 2 of big potatoes.

  17. You need 1 of onion.

  18. Prepare 1 tsp of cumin seeds.

  19. You need 1 tsp of fennel seeds.

  20. You need 1 tsp of coriander seeds.

  21. You need to taste of salt and red chilli powder.

  22. It’s 1/2 tsp of Turmeric powder.

  23. Prepare 1/4 tsp of black pepper powder.

  24. You need 1 tsp of sugar.

  25. It’s pinch of asafoetida.

  26. You need of For decoration.

  27. It’s As needed of Sev or crushed fried Papad.

  28. Prepare as needed of Dhaniya/Coriander leaves.

  29. You need as needed of pomegranate seeds.

  30. It’s 1 cup of curd beaten.

  31. Prepare 2 tsp of tamarind paste.

  32. It’s 1 tsp of cumin powder.

Surti Locho as name reflects is specialty of Surat.

In the morning, many stalls sell this locho to go with tea and enjoyed by many workers.

This recipe is similar to Khaman or Khamni recipe made by surti people.

Khastaa Sooji Puri with Surti Locho step by step

  1. For Surti Locho soak the lentils for around 9 hours in water.

  2. Before preparing paste, add the remaining ingredients in a bowl and make it into a fine paste.

  3. In an Idli maker, please steam for 25 mins till you get the Khaman prepared.

  4. For making Suji Puri dough, all the ingredients as mentioned above and with around 3/4th cup of water, we prepare a semi soft dough below and make it rest for 2 hours.

  5. For making the stuffing add oil, dhania, jeera and fennel seeds and roast them till the aroma is strong enough. This is what it makes our stuffing awesome and adds a North Indian tinge.Add onions, boiled potatoes and add the remaining ingredients except Besan and saute them with more oil till golden brown. Now add Besan and add prepare the stuffing as shown below..

  6. Make small balls of the dough and add the stuffing in it, and deep fry all.

  7. Now for the final decoration make a hole in the Puri at the centre and to it add some beaten curd mixture in tamarind chutney and Jeera powder, crushed fried Papad Sev, Dhania,pomegranate and some more tamarind chutney.Add Surti Locho to the sides with crushed Papad and its ready to serve..

For making surti locho in steam take any steamer or any utensil in which other utensil can be placed.

Take out piping hot surti locho in a plate with help if a spoon.
