It's my mother-in-laws favourite salad and I normally make it on request specially for her.

I prefer flat leaf fresh parsley (also known as Italian Parsley) as it's better texture but curly leaf is alright.

  1. You need 2 bunches of parsley finely chopped.

  4. You need 1-2 of garlic cloves, minced (optional).

  5. You need 1/2 cup of extra fine bulgar.

  6. You need of Some flaxseed (optional).

  7. You need 4 of Onions (1 white and 3 green onions very finely chopped.

  8. You need 1 of cucumber finely chopped.

  9. You need 4 of Small to medium heads of radish finely chopped.

  10. It’s 2 of lemons juice.

  11. Prepare 4 tablespoons of extra virgin olive oil.

  12. It’s Dash of black pepper and cinnamon.

  13. It’s of Romain lettuce leaves washed and dried to serve/decorate with.

  14. Prepare of Salt to your taste.

  3. Place all in a large bowl and toss or mix all gently; parsley, mint, tomatoes, lemon juice, garlic, radish, peppers, cinamon, salt and at the end add the olive oil and flaxseed (optional).

  4. Taste and adjust seasonings as you like while mixing; serve with lettuce leaves..

Some variations add lettuce, or use semolina instead of bulgur.
