I have been making this deliciously tasty Moroccan-style recipe for years.
It's so easy to make, it has become a regular mid-week meal in our house.

You need 2 of bone in chicken leg quarters (skin removed).

Place the onion, garlic, carrots, sweet potatoes, chickpeas and chicken breast pieces into a slow cooker.
Cook, turning chicken occasionally, until browned.
Top with browned chicken and garlic.
In small bowl stir cumin, ginger, ground red pepper and crushed red pepper until well blended.

Add sliced olives & pimentos to the sauce. In a separate small bowl, mix together the water & cornstarch. Pour the cornstarch mixture into the mixture & stir to combine..

Cover & cook on high for about 15 minutes or until thickened..

Serve chicken on a bed of couscous, pour sauce from slow cooker on top..
