You need 7 pieces of green bananas(peeled).

It’s 1/2 tsp of paprika.

You need 1/2 of turmeric.

You need 1/2 of garam masala.

Prepare 1 of corriander.

It’s 1 of onion……1clove of garlic.

Prepare 4 of ripe tomatoes(chopped).

You need 1/4 tsp of sugar.
If you use green bananas for this dish, make sure they are very green.
Matoke (or Matooke) refer to the plantain or plantain banana in Uganda, where plantains are a staple crop.
In Uganda, plantain bananas are often wrapped in plantain leaves and steamed until tender.
Bring to a low boil, then reduce heat and cover.

Peel, wash your potatoes…..boil them with a little salt till soft for about 10mins……mash them add paprika, garam masala, tumeric also add some salt if need be…add half of the corriander chopped……combine them.

Scoop alittle and make balls out of the mashed bananas……. shallow fry till golden brown……

In a pan fry onion+garlic till golden brown, add your tomatoes + spices of your choice + sugar(since tomatoes are acidic you add alittle sugar to kill the acid)……let them cook on low medium heat till they are juicy now add your fried banana balls….let them simmer……garnish with the remaining corriander.

Serve with chapati, spaghetti, rice,…..enjoy!.
Stir in cilantro and basil, add more salt if needed.

Sautée vegetables: In a skillet heat the oil over low heat and cook and stir the onions until the onions become translucent.
