Bengali Pure Veg Thali-No Onion No Garlic Thali

You can have MahaAshtami Sandhi Puja Thali: Luchi, Chholar Daal, Tomato Chutney & Kesari Halwa using 37 ingredients and 19 steps. Here is how you achieve it.

Ingredients of MahaAshtami Sandhi Puja Thali: Luchi, Chholar Daal, Tomato Chutney & Kesari Halwa

  1. You need of Luchi: 2 Cups Maida (Knead into a Smooth Dough).

  2. You need of As Required: Lukewarm Water.

  3. You need 1 of tsp/To Taste Salt (Optional).

  4. You need 2 tbsps of Ghee.

  5. It’s 1 Cup of Chholar Dal (Chana Dal): Washed & Soaked in Warm Water overnight (at least- 2 hrs time).

  6. Prepare 500 ml of water (To Boil Dal, with some salt).

  7. You need 3-4 tbsps of Ghee.

  8. It’s 1/2 tsp of Hing/Asafoetida.

  9. You need 2 of tsps Cumin Seeds.

  10. You need 2 of Red Chillies (Whole).

  11. You need 3-4 of Slit Green Chillies.

  12. Prepare 1-2 of Bay Leaves.

  13. You need 1 of ” Cinnamon Stick.

  14. Prepare 3-4 of Cloves.

  15. You need 3-4 of Green Cardamoms.

  16. It’s To Taste of Salt.

  17. You need 1 tbsp of Sugar.

  18. Prepare 1 tbsp of Ginger Paste.

  19. It’s 1/2 Cup of Fresh Coconut (Grated/Cubed)- 1 Cup (If using Desiccated Coconut).

  20. Prepare 1 tsp of Turmeric Powder.

  21. You need 1 tsp of Garam Masala Powder (Homemade).

  22. You need 1 tsp of Cumins Powder.

  23. Prepare 1/2 of Bhuna Masala Powder (Homemade).

  24. You need of Tomato Chutney: 2 Cups Tomatoes (Cut into Cubes).

  25. It’s To Taste of Salt.

  26. It’s 1 tsp of Turmeric Powder.

  27. You need 1/2 Cup of Sugar.

  28. It’s 1 of Lemon Juice.

  29. It’s 1 tbsp of Cooking Oil.

  30. Prepare of Kesari Halwa: 1 Cup Rawa/Suji.

  31. It’s 1/4 tsp of Salt.

  32. Prepare 1/4 Cup of Sugar.

  33. You need 2 tbsps of Brown Sugar.

  34. You need 4 tbsps of Ghee.

  35. You need 1/4 Cup of Freshly Chopped Nuts (Whatever’s available).

  36. It’s 1/2 Cup of Milk.

  37. It’s 1 of Few: Saffron Strands (Soaked in Warm Milk).

Durga Ashtami or Maha Ashtami is one of the most auspicious days of Durga Puja Festival.

This day is also known for 'Astra Puja'(Worshiping Weapons) as on this day the weapons of goddess Durga are worshiped.

Maha Ashtami will be celebrated on. tomato chutney, but reduces the shelf life of this chutney. while chutney recipes are heavily used in india and in its cuisine, but ironically it is furthermore add urad dal, chana dal, methi and red chilli. adding few seeds of methi gives a nice taste to chutney.

Cholar dal is made with chana dal or bengal gram.

MahaAshtami Sandhi Puja Thali: Luchi, Chholar Daal, Tomato Chutney & Kesari Halwa step by step

  1. Luchi: Take sufficient Oil in a deep wok & heat up over the high heat until hot enough.

  2. Roll out the Luchis in your desirable round sizes and deep fry them in the heated oil until they fluff up from each of its sides.

  3. Transfer it to the serving platter & serve hot with sabji, Chutney, halwa, dal, etc..

  4. Tomato Chutney: In a frying pan heat some oil over the medium heat & drop in the chopped tomatoes into it.

  5. Add in the salt & turmeric powder & sauté until they start becoming little mushy…cover the lid & simmer the flame for sometime & allow it to cook until absolutely tender & mushy.

  6. Open the lid- now, once it’s properly cooked add in the sugar & mix well until dissolved in it & the Chutney starts thickening.

  7. Lastly, add in the lemon juice & mix well- turn off the flame & transfer it to the serving bowl & serve either hot or chilled.

  8. Kesari Halwa: In a frying pan- Add in the ghee over a medium flame and roast the rawa in it.

  9. Once it’s light brown- Add in the milk, mixed with some water gradually & mix well until all combined.

  10. At this point: Add in the Sugar & mix everything together until well incorporated.

  11. Once the mixture starts leaving the pan add in the chopped nuts & the saffron milk & cook over a low -medium flame, for about 5 mins time, stirring occasionally.

  12. Turn off the flame & transfer it to the serving bowl.

  13. Chholar Dal: Boil the soaked Chana Dal in the pressure cooker with at least 3-4 whistles or until well cooked (depending on the water & the soaking time).

  14. The Dal should be well cooked but not at all mushy…Now, over a medium heat- Put on the frying pan with the measured Ghee & add in the tempering spices.

  15. Sauté, until it releases nice aroma- Add in the Hing, salt, cumin & turmeric powder & sauté for a minute or so.

  16. Pour in the cooked dal now & keep stirring continuously (flame should be low-medium), add in the sugar & the slit green chillies & mix well.

  17. Once all well combined: Add in the garam masala & the Bhuna Masala Powder & mix all nicely.

  18. Finally, turn off the flame, once it comes to a couple of boils & add in a dollop of ghee- Turn off the flame & let it sit on its standby position for about 15 mins time before serving hot with the Luchi, Rice, Parathas, Fried Rice, etc..

The dal is slightly sweet and fragrant due to the addition of whole spices or garam masala like bay leaf, cloves Cholar dal is usually made thick unlike other Indian dals like Dal tadka or Dal fry. if you prefer you can.

Sandhi Puja also falls on Maha Asthami and starts when the Ashtami tithi ends and Navami tithi begins.

It's a very easy tomato chutney recipe with very few ingredients and goes well with idli and dosa.
