Ingredients of Hot Jalebis

  1. Prepare 1/2 cup of maida.

  2. It’s 2-3 tbsp of curd.

  3. Prepare 1 pinch of baking soda.

  4. It’s as needed of Red/yellow food colour.

  5. You need 2 tbsp of cornflour.

  6. It’s as required of Water.

  7. Prepare of For sugar syrup.

  8. Prepare 1 cup of sugar.

  9. Prepare 1/2 cup of water.

  10. You need 1 pinch of cardomom powder.

  11. You need strands of Few saffron.

Hot Jalebis step by step

  1. In a bowl, add maida, baking soda, cornflour, 1/4th tsp food colour & mix it well. Now add curd & 2 tbsp of water and whisk it well to form a semi-thick batter….

  2. Now cover it and rest it for 15 mins. Now for sugar syrup, take a kadai or deep vessel, add a cup of sugar, now add half cup of water. Now wait for sometime, until the sugar dissolves and let it boil for about 5 mins., now switch of the flame. You just need to dissolve the sugar, dont concentrate on 1 string or 2 string consistency….

  3. Now fill the batter in a piping bag. Make a cut on the tip of it with a small scissor. Heat a pan & pour some ghee in it. Once the ghee turns hot, make swirls to form jalebis. Add & soak them to the syrup and quickly remove them..

  4. Now sprinkle some kesar over it. Serve these hot jalebis with prior prepared cold rabri….

Jalebi is made with maida (all purpose) flour and Jangiri with ground urad dhal.

Jalebi batter is also supposed to be left to ferment (giving it a faint tangy flavour) while Jangiri is not.

Jalebi is a nostalgic food for me.

In my childhood whenever I went to Mela (fair) we always bought the hot jalebis and roasted peanuts… Without the jalebis going to the fair was incomplete!
